This might seem like a boring salad but it packs in a lot of punch. I made this a few years ago when I was in Mangalore. With a handful of ingredients, I managed to pull off a delicious salad. It’s enjoyed very much in South India. The only time consuming part – grating carrots.
So here is the recipe for my 1-2-3 Carrot Salad
1-2-3 Carrot Salad
Grated Carrots – 2 cups
Salt & sugar – to taste
Lime juice / vinegar – to taste
Oil – 3 tbsp
Green chillies – Finely chopped
Jeera – ¼ tsp.
Mustard seeds – ¼ tsp
Curry leaves – 6 to 7
- Mix the grated carrots with salt, sugar & lime juice/vinegar. Taste and adjust the flavours.
- In a tempering vessel, add the oil, green chillies, jeera, mustard seeds and curry leaves. Once it’s crackling, add all of it over the grated carrots.
- Mix and serve.
