This is not your average brownie. When you bite into it, you will first hit the chewy, almost cookie-like exterior. Sink in your teeth through the top layer and find yourself hitting the soft brownie center. I like having this fresh out of the oven to experience the best flavor. If it gets cold, pop it in the microwave for about 30 to 60 seconds.

Ingredients

Dark Chocolate – 100g

Unsalted Butter – 120g

Sugar – 250g

Eggs – 2 large

Vanilla essence – 5 ml

Salt – 1 tsp

Flour – 110g

Method

Pre-heat the oven to 180 degree Celsius and line a muffin pan with the muffin cups. In a medium sized bowl, simmer some water and place a bigger glass bowl over it. Add the chocolate and butter. Melt the two and mix it well until smooth. Take off the heat and whisk in the sugar, eggs, vanilla and salt. Add the flour little by little. Once the batter is mixed well, pour it into the prepared pan. Make sure that you fill up the cups only 3/4th. Bake it in the oven for about 25 to 30 minutes. Best enjoyed when warm.

      I recently came across a product at Nature’s Basket in Bandra Hill road called ‘egg replacement’. Try using that.
