Pilsner Drowned Lamb Shanks with Leffe Blond
The food: This is one of my favourite dishes at the Barking Deer. The lamb is cooked in pilsner for hours to achieve that beautiful, delicate meat that falls off the bone. The sauce is a combination of the meat juices and the pilsner reduced to create a rich gravy. Served with roasted baby potatoes flavoured with rosemary and creamy garlic spinach, it’s a wholesome dish. I suggest using the beard to soak up all the juices once you’re done with the lamb shanks.
The beer: Leffe Blond is a pale Belgian blonde ale brewed since 1967. It has a beautiful gold colour and forms a creamy head. It has notes of toasty malt and a hint of mashed bananas. Leffe Blond fills up your entire mouth with a delicious flavour which makes me want to go back for it again and again. What I absolutely love is the glass called Leffe Chalice it is always served in.
Match made in heaven: Pairing this Belgian beer with the Pilsner drowned is absolutely perfect. The rich flavour of the lamb shanks tends to stick to your palate. What Leffe Blond does is round off the flavours with a bit of sweetness at first and then the hoppy bitterness kicks in. This flavour combination clears your palate and prepares it for the next hit of juicy lamb shanks.
